I've been bitten by the quarantine cooking bug! After binging Nadiya's Eats on Netlfix and reading Radhi Devlukia-Shetty's conscious eating blogs, I took a shot at trying to bake banana bread which unless its from a box, has never been my forte. I can cook, I can make easy things but baking is not something that runs in my family. We had two ripe bananas that were at the point of turning black, that I decided to try my own little thing here and make banana bread.
Ingredients
Dry
2 cups of flour
1 tsp baking powder
1 tsp baking soda
pinch of salt
Wet
1 tsp vanilla extract
Chocolate chips (add as many as you want)
6 tbsp of butter melted
2 eggs
Ripe Bananas peeled and mashed
1/3 cup brown sugar
1/3 cup white sugar
1 tspn vanilla extract
Method
Combine all dry ingredients and whisk together lightly
Combine the wet ingredients, starting with the bananas first.
After combining wet ingredients, mix using a baking spatula. The wet ingredients should all be yellow,
Combine the wet ingredients into the dry ingredients and gently fold with the baking spatula the finished batter should look as pictured. No flour mixture should remain
Bake at 350 for about 45 minutes
